Ingredients
Tostadas:
- 4–5 small corn & gluten-free tortillas
- ½ cup diced onion
- 3 garlic cloves, finely chopped
- 1 lb Irish potatoes, peeled and diced
- ½ tsp ground cumin
- 1 tsp ground coriander
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp sweet paprika
- ½ cup water
- ½ cup shredded red cabbage
- ½ cup diced red pepper
- ¼ cup chopped fresh cilantro
- Sea salt to taste (optional)
- Lime juice to serve
Avocado Sauce:
- ½ cup ripe avocado
- ¼ cup fresh cilantro
- 2 tbsp lime juice
- 1 garlic clove, roughly chopped
- ½ cup water
- 1 tsp maple syrup
- Sea salt (optional)
Directions
- Preheat oven to 200°C (400°F). Bake tortillas directly on the rack for 2–4 minutes until crisp. Watch closely to prevent burning.
- In a skillet over medium-high heat, sauté onion for 3–5 minutes. Add garlic, potatoes, and spices. Cook 2–3 minutes until fragrant.
- Add water, cover, and cook 10–15 minutes until potatoes are soft and water evaporates. Add more water if needed.
- Blend avocado sauce ingredients until smooth.
- To serve, layer potatoes on tostadas. Top with cabbage, red pepper, avocado sauce, and fresh cilantro. Finish with lime juice.
